How can i ammend the post costs and add a discount on the invoice after the customer has purchased and finished checkout.

If the order has not been processed (paid, or invoiced, or dispatched, or completed), you can go to Orders -> Modify sales orders to update the order.
However, if the order has been processed, you can not modify the order any more. You can only cancel the order, and create a new order for the customer from Customers -> Place customer orders, where you can select a customer and place the order for him/her.
